Super Easy and Delicious Lamb Shank in PPC

Can you believe it that this plate of lamb shank with mashed potatoes was ready in an hour, inclusive of 15 minutes active time?

From prepping to cleaning, all done in under an hour!

I was looking for a pressure cooker recipe for our JomSalmon’s lamb shank and I found this recipe, which used Gordon Ramsay’s recipe. That was what caught my eye. Gordon Ramsay’s recipes are always my normal go-to’s – he uses regular ingredients, quick, and best of all, easy!

But, like with all recipes, I always change it up to what we have in our kitchen. And in this case, I -almost- have all the ingredients except the wine (duh) and beef broth. So, instead of 2 cups of red wine and 4 cups of beef broth, I just did a liquid mixture of:

4 cups of water
2 tbsp oyster sauce
1 tbsp Lea Perrin’s Worcestershire sauce
2 tbsp tomato sauce (ran out of tomato paste!)
1 tsp mustard

Like rojak, I tell you. LOL. But the liquid tasted yummy though! And although the recipe said to use 3 lamb shanks, I cooked 4 lamb shanks and there was still plenty of gravy to go around.

Oh and I didn’t do any of those straining the liquid with a mesh thing. I just did a ‘sauce thickening’ option twice and the gravy thickened to the right consistency.

That mashed potato recipe you see up there, is super simple and delicious. I normally prepare the mashed potato while the PPC is cooking. It’s a KitchenAid recipe, but I don’t have the recipe book with me any more. But roughly the recipe goes like this:

  1. Boil 1 kg of russet potatoes (skin removed and quartered) in salt water until soft.
  2. Strain the potatoes and mash while they’re still hot.
  3. Put in 120g of melted butter and mash some more.
  4. Put in 100ml of heavy cream and mash a little more.
  5. Salt and pepper to taste. Keep mashing, until no more lumps (or if you like lumpy mashed potato, more power to you!).

Takes about 20 minutes to be ready. Manually mashed by yours truly. Very easy one. But actually sometimes I don’t really follow the recipe. LOL. Adjust as you see fit. If I can’t taste the butter, I would add a bit more. Little missy likes this mashed potato a lot, so I have to time the mashed potato to be ready at the same time as the main dish. You know, so that the mashed potato doesn’t ‘disappear’.

That’s it! While the PPC is doing its thang and the potatoes boiling, I just clean as I go. Like they always say, if you have time to lean, you have time to clean!
